Finding my Inner Passion in the Kitchen

Yesterday, I was invited by my fellow publisher Mello to join her and her editors to visit the Center for Culinary Arts in Eastwood to ignite our inner passion. Despite being so busy, I immediately said yes even without reading the email. It was only that morning when I found out what exactly we will be doing and how long it will take.

I've always dreamed to be a chef. Nothing makes me happier than bringing out my creativity on a plate. I love food and food loves me. 'Nuff said.


During the introductions made, we found out that the Kitchen Discovery Class is a pre-requisite for all aspiring culinary students of the CCA. Here, the students will be evaluated based on their kitchen readiness and as they will be given the chance to get a better glimpse of what to expect for the two-year diploma course.


That afternoon, we just had our session for two-hours but man, it has really ignited my love for the kitchen.I love the kitchen auditorium! It's fully-equipped with all the nicest gadgets plus an LCD TV where we can see what exactly the chef is doing on the kitchen counter.

We had Chef RJ Ungco who demonstrated three delicious dishes:


Parma Ham and Roasted Melon Salad Mesclun with Orange Balsamic Dressing. I love the inclusion of lots of arugula leaves and the Orange Balsamic has a perfect sweet-sour balance.


Now I know how to pan sear melons and wrap Parma ham around it.


Calamari and Prawn Pasta with Aligue White Wine and Cream Sauce. A heart-stopping blockbuster! At first, I was hesitant to try this calorific dish as its loaded with crab fat (aligue) and heavy cream plus the deep fried calamari and prawns but after hearing everyone's oohs and ahhs, I knew I had to take a small portion and I was glad I did! It was yummy! I wish I asked if there was a low-fat version for this.


Roasted Chicken. Julia Child mastered this and so can YOU! Even my colleague Kat, who assisted Chef RJ, proudly showed off her masterpiece! I love how the delicious smell of the roasted chicken quickly filled up the room making us even more hungry.


For dessert, we had Apple Streudel. This is one easy dessert that even kids can make! A perfect way to enjoy this is with a scoop of vanilla ice cream. Yum!
